Viral TikTok Salmon & Avocado Rice Bowl

You may have heard of Emily Mariko who took TikTok by storm with her calming food prep videos. One of her most popular videos was the viral TikTok salmon & avocado rice bowl which is super easy to replicate. The best part of this dish is that it’s convenient and consists of pantry staples as well as leftovers.

 

One of my favorite aspects of the viral TikTok salmon & avocado rice bowl is that it is a whole meal with simple ingredients. It takes less than 10 minutes to put together and you can enjoy it with different condiments or side dishes.

 

Don’t like salmon? No worries, you can easily substitute it for tuna, mackerel or any other flaky fish with a mild flavor. As for seasoning, I usually marinate the salmon with salt, pepper, garlic powder, paprika, and lemon juice. However, if I use canned tuna, no extra seasoning is required.

 

I have tried out this dish with different types of rice and my favorite has to be Jasmine rice. It’s not as sticky as sushi rice but still starchier than Basmati which makes it the perfect in-between option.

Ingredients
  

  • 2 cups Cooked leftover rice *old rice is best for this dish
  • 1 cup Flaked cooked salmon *or your favorite fish (Tuna works well too)
  • 2-4 tbsp Sriracha *or your favorite hot sauce
  • 2-4 tbsp Kewpie Mayonnaise
  • 2 tbsp Light soy sauce
  • pinch Furikake rice seasoning *optional
  • 1 medium Avocado *sliced

Instructions
 

  • Heat up the leftover rice in a microwave for up to 3 minutes covered.
  • Flake up your cooked salmon with a fork.
  • Once the rice is heated, add the mayo, soy sauce, sriracha. Mix thoroughly.
  • Sprinkle over the furikake rice seasoning as a garnish.
  • Slice open an avocado and scoop out the pit carefully. Then slice the avocado according to your preference.
  • Place the avocado on top of the rice and enjoy with seaweed sheets, kimchi or my asian spiraled cucumbers!
